Healthy Taco Salads

Tonight, Michael and I collaborated on dinner. He grilled the chicken and I compiled the salads.

I used:
Romain lettuce, chopped
Red cabbage, shredded
Avocado
Roasted onions, red pepper and zucchini (roasted at 400 for 20 minutes while I prepped the rest)
Jalapeños, minced
Parmesan and pepperjack cheese
Fresh tomatoes
Cilantro and basil
